My husband Phil came home with a huge bag of tomatoes from the flower show!

Being very busy at this time of year, I decided to make some delicious tomato soup
Here's how I did it!
I chopped up the tomatoes and an onion, lots of peeled cloves of garlic, and threw in a big sprinkling of mixed herbs.
I added three vegetable stock cubes to about 500ml of boiling water, you could use chicken stock. Don't add too much water because lots of juice will be generated from the tomatoes.

I left the pan simmering with the lid on for 30 minutes.
I blitzed the mixture in the blender making two jugs of soup base.
To thicken the soup base, I made a quick roux sauce using melted butter and flour. Instead of adding milk to the roux, I used my two jugs of soup base. NB Don't add too much flour to the roux or the soup will be too thick.

We enjoyed the soup with crusty bread, a sprinkling of parmesan and a good drizzle of our Basil Infused High Polyphenol Olive Oil!
