This classic balsamic is made from the Trebbiano and Lambrusco grapes grown on the family estate of Nicolo Verrini in the countryside near to Modena in northern Italy.
Nicolo himself selects and oversees the crushing and cooking down of his grapes into a top quality must, which he then matures in oak barrels. This allows the water in the must to evaporate naturally, the flavours in the oak barrels to be fully absorbed and the taste of the resultant vinegar to become deep, beautifully sweet and very well balanced.
