This is a single varietal, single estate olive oil crafted on the Disisa estate, Northern Sicily, by the The Di Lorenzo family . The olives were handpicked and then cold pressed immediately using the latest technology to ensure absolutely no heat is created in the process. Traditionally in Sicily and the rest of Europe, olives are harvested in November/December, when the olives are at their largest. The Cerasuola olives that were cold pressed to create this luxury olive oil were harvested in October, whilst still very green.
