Ingredients
- 250g dried Orzo or other small pasta shapes
- 1tbsp White Balsamic
- 70g Sundried tomatoes, roughly chopped
- 1 tbsp capers
- 2 shallots, finely chopped
- 70g pitted Kalamata olives, roughly chopped
- 145g can of crab meat
- 50g wild rocket leaves
- 3 tbsp Lime & Chilli Olive Oil
- Sea salt & black pepper
Method
- Cook pasta according to the pack
- In a large bowl, mix together the balsamic and olive oil.
- Drain the pasta when cooked and refresh under cold water.
- Transfer pasta to bowl with the dressing. Add shallots, olives, capers, tomatoes, crab and rocket.
- Season with sea salt & black pepper to taste.
- Gently toss until everything is coated.
- Serve with an extra drizzle of olive oil & balsamic to suit and enjoy!
