Richer, thicker and more intense than our Classic balsamic, this matured for longer Reserve balsamic adds a little sophistication to just about any dish. Traditionally matured in oak barrels in Modena, Italy, it is quite unlike anything you can buy in the supermarkets here in the UK
Drizzle over salads, fish, meats, roasted vegetables, mushrooms, tomatoes, cheese, strawberries, ice cream….. or in fact, almost anything! Superb when mixed with any of the gift of oil’s premium or infused olive oils as a dip with fresh bread or as a dressing. Fantastic over sea bass, salmon or thick juicy steaks!
The Reserve is made from the Trebbiano and Lambrusco grapes grown on the family estate of Nicolo Verrini in Modena, northern Italy.
The best of those grapes are carefully selected, crushed and then gently cooked down over an exposed flame into a remarkably thick and dense must which is then mixed with just a little top quality wine vinegar before being allowed to mature in ancient oak barrels, especially reserved for the task.
This maturation process allows the water in the must to evaporate naturally and for the flavours buried deep in the ancient woods to be slowly absorbed. Over the course of many years the taste of this exceptional balsamic vinegar becomes delightfully rich and intense, with an excellent balance between the sweet and the sour being gradually developed.
